They are still great in stews and other dishes, they can be chewed raw as a healthy snack and they still maintain a sweet and savory taste. Cholesterol levels can drop by an average of eleven percent with the consumption of seven ounces of carrots per day.

Bone health

Carrots contain small amounts of calcium which is important for bone health and growth. Most women who undergo menopause do not get enough calcium, and while carrots do not contain large amounts, every little amount helps. For bone growth in infants, include steamed and mashed carrots in the diet.
It is important not note that for these health benefits, the carrots have to be consumed raw or lightly steamed. Deep frying or roasting subjects the carrots to high amounts of heat which can damage the nutrients in the carrots.
